Learn to cook from an Italian chef

Sun, sea, sand – and a hint of the exotic: Sicily teeters on the edge of Europe and its flavours are tinged with the culinary heritage of North Africa. Moorish invaders introduced spices such as cloves, cinnamon, nutmeg and saffron along with citrus fruits to the island. The Byzantines, Romans, Greeks and Spanish also left their mark on the architecture and cuisine. We base ourselves in Sicily’s south-east surrounded by the crumbling grandeur of historical sites such as Siracusa’s Greek Theatre, and the Baroque towns of Noto and Ragusa – and within easy reach of some of the region’s best local produce. Our cooking lessons are relaxed, fun and hands-on. They take place in the kitchen of the villa, with everyone working in a group with the chef.

Group sizes are usually about eight people and generally half are single travellers. Whether you're used to travelling alone or simply taking some time out for yourself, the relaxed, friendly atmosphere at all our venues is geared towards allowing you to be part of the group when it suits and striking out on your own when you want to.

This holiday is not just a typical touristic experience as it involves travelling with a purpose and the opportunity to see the genuine and local face of Italy. Our local Italian hosts have lived abroad and know exactly what to do to avoid making our guests feel like tourists. They will always be by your side and organise trips to wine tastings, local food producers, markets and sites of cultural interest.

The ages of our guests vary. We understand that it is important to be with like minded people, so we always do our best to match ages for each group. Our guests are from all over the world - mostly from Australia, UK, USA, New Zealand, Canada and South Africa.

And most importantly for solo travellers - there is NO SINGLE SUPPLEMENT!

TOUR DETAILS

Groups are small so everyone can really get involved. Our chefs are very passionate about cooking and sharing their knowledge. You’ll learn new techniques and skills, while creating recipes traditional to the region using fresh, seasonal ingredients. Italian food is simple but tasty and the recipes you’ll learn are ones you can bring home and create in your own kitchen with ingredients that can be found anywhere.

We base ourselves in Sicily’s south-east, within easy reach of some of the region’s best local produce. Nearby Avola produces almonds, Ragusa wine and Caciocavallo cheese and Pachino, sweet ripe cherry tomatoes. Fresh fish is, of course, a highlight of this Mediterranean island: think grilled swordfish, tuna and anchovies along with regional specialities such as spaghetti con le sarde (a sardine and pasta dish) and pasta con le sarde e finnochio (with fennel). Then there’s sheep’s milk ricotta – which is also used to make one of Sicily’s signature sweets. Cannoli are fried pastries stuffed with sweet ricotta and sugar and dipped in chocolate. The island is famous, in fact, for its sweets: cassata is a delicious ice cream dish while granita, a semi-frozen dessert, was invented here.

Day one (Saturday)

Depending on your arrival time, there will be a transfer from Catania Airport to the villa. Enjoy welcome drinks and time to relax before dinner prepared by our local chef.

Day two (Sunday)

After breakfast is your first cookery lesson with our local cook, followed by lunch. You are free in the afternoon to relax at the Villa and explore the estate. Dinner is served at the villa.

Day three (Monday)

This morning you will enjoy a private tour, lunch and wine tasting at a local vineyard. In the late afternoon you will be in the kitchen with our chef for your second hands-on cookery lesson, followed by dinner.

Day four (Tuesday)

Today we visit the coastal town of Siracusa, do some sightseeing and have lunch in a local restaurant. We then travel to Noto to taste local ice cream at a classic Gelateria. Tonight, enjoy dinner at villa Aragonese.

Day five (Wednesday)

After breakfast, enjoy another hands-on cookery lesson and lunch at the villa. The afternoon is yours to relax and enjoy the pool. Dinner is served at the villa tonight.

Day six (Thursday)

Another cookery lesson this morning before heading to Modica to taste its famous chocolate from a local producer. You can then explore the stunning town of Ragusa, where we will have an evening meal at our favourite local restaurant.

Day seven (Friday)

Following breakfast, a cookery lesson and lunch you will be free to relax for the afternoon at the villa by the pool. In the evening we will enjoy our final meal at the villa.

Day eight (Saturday)

You have a leisurely morning followed by a buffet brunch in the villa. At around 13:45 you will be transferred back to the airport.

ACCOMMODATION

Our villa in Sicily is situated on a private estate, and is of typical Sicilian style and dates back to 1848. Chosen because of its location, it has some beautiful views of the surrounding areas. Upon waking in the morning to a clear blue sky, you can enjoy breakfast outside and soak up the sea views.

The villa has luxurious bedrooms, all decorated in a modern style with ensuite bathrooms. Each room has a view of either the sea, almond grove or the Sicilian countryside. There is a beautiful spacious dining room, the perfect setting to enjoy all the Sicilian dishes you will be creating. Because cooking is just a part of your holiday we have chosen to surround you in an environment that will completely immerse you in the flavours of Sicily.

To let you discover the flavours of Sicily we have based our venue in the south east of the island: the place where it all began. The surrounding area is dotted with well know historical sites – such as the Siracusa Greek Theatre, Temples of Agrigento and various Baroque towns such as Noto and Ragusa – as well as popular gastronomic locations such as Pachino for cherry tomatoes, Modica for chocolate, Avola for almonds and wine, Ragusa for Caciocavallo cheese and so on.

Within the grounds of the estate there is an outdoor pool, which is encircled by almond and olive trees. After a dip, you can sit back and relax on the terrace and enjoy the sight and sound of the sea.
